If you've seen a video of beef being pounded into a beef paste and later made into beef meatballs, you would be as curious as me at Shen Niu's opening at Starling Mall.
For noodles there is a choice of fresh ramen or kuey teow with a meatcut of your choosing. For a bowl of noodles, it did feel like it was on the pricey side until the actual noodles was served.
I went for the Spicy Beef Noodles with fresh ramen and the portion was substantial with lots of tender and flavorful beef which still had a nice bite. The soup had intense beefiness and a nice amount of herb flavor. The spiciness came in the form of chili oil and Sichuan peppercorns.
There wasn't much of a chili flavor but instead there was the fragrance of chilli and peppercorns. There was just the right amount of Sichuan peppercorns and it added very little numb resulting in a pretty pleasant bowl of spicy beef noodles.
The only thing I felt they lacked were the chunks of radish that beef noodles usually had.
As for the star of the show - the beef meatballs. It was confusing. The texture was of a succulent and bouncy fishball but there wasn't much beef flavor. It was also juicy but not with beef juices.
